The recipe below adds non-standard ingredients.

Soak the cucumbers in ice water again. I repeat that it is in this way that the fruits come out crispy for the winter without sterilization. As usual, we process liter jars before screwing. We put horseradish, dill, celery, garlic and pepper in them. Green ingredients need to be chopped coarsely, but in such a way that it is convenient to take them out afterwards.

The cucumbers need to be packed very tightly into the jar. Heat the water again, pour it into a jar of cucumbers, and after a few minutes pour it into the pan. Boil the water and repeat the procedure, leaving the liquid to infuse in the jars for 10 minutes. During subsequent boiling, add salt and sugar to the water. Pour the resulting brine over the cucumbers, first pouring vinegar into the jars.

Option three (for a 3 liter jar)

First, you need to trim the ends of the cucumbers and place the vegetables in ice water for 5 hours. Place dill, garlic and all the leaves (except laurel) into prepared jars.

Cucumbers in jars should be placed vertically. Heat water, pour boiling liquid into a jar with spices and cucumbers. Cover and leave for a few minutes. Pour the liquid into the pan, pour it again, and leave covered again. After 5 minutes, pour the water into the pan. During the third boil, add pepper, bay leaf, salt, sugar and vinegar. Keep on fire for 1 minute, then pour the marinade into jars and immediately roll up.

For a 3-liter jar I take 2 dill umbrellas, 8 peppercorns, 6 blackcurrant leaves, 1 horseradish leaf divided into 3 jars, 2 cloves of garlic, 3 bay leaves and 2 tablespoons of salt and 4 tablespoons of sugar. All the spices are in a jar with the cucumbers, pour boiling water over them, hold for 5 minutes. Then I pour them into the pan, boil them back and add sugar and salt to the boiling water, add a teaspoon of vinegar before rolling. The results are tasty and crispy.

  1. Wash the cucumbers thoroughly and fill them with cold water. For how long? I usually don't time it. I begin to prepare the jars and other ingredients and as soon as everything is ready, I begin the process of canning the cucumbers.
  2. Wash the jars thoroughly with baking soda, rinse well and sterilize. You can do it in any way convenient for you. I usually do this in the oven (see more details here).
  3. Prepare other ingredients. Dill (I usually use umbrellas and stems rather than the greens themselves), horseradish leaves - cut into small pieces, this makes it easier to put them in jars. Dill, horseradish leaves, cherry leaves, basil can be used both fresh and dry. Place everything in a colander, rinse and pour boiling water over it. Divide the garlic into cloves, peel and wash. I also pour boiling water over mustard seeds and peppercorns.
  4. Lately I have been canning cucumbers in 2-liter jars, so the recipe will be for this exact volume. If you are canning in larger or smaller jars, adjust the quantity according to the volume of the jar.
  5. In sterile jars at the bottom we place 3 - 5 stalks of dill, 2 - 3 pieces of horseradish leaves, 2 - 3 cherry leaves, a small sprig of basil (together with the stalk and leaves), 3 - 5 cloves of garlic.
  6. Cut off the ends of the cucumbers on both sides and place them tightly in the jar.
  7. Boil lids for canning in water for 5-10 minutes.
  8. I offer you a recipe for canning cucumbers for the winter without sterilization. Since cucumbers are more capricious than, for example, tomatoes, we will pay more careful attention to the canning process:
  • Pour boiling water into the jars with cucumbers, cover with sterile lids and leave for 10 - 15 minutes. While the jars are standing, prepare new boiling water. After 10 - 15 minutes, drain the boiling water from the jars and add new boiling water, cover again with the lids and leave for 10 - 15 minutes. Now we don’t need to prepare new boiling water; we’ll use what’s in the jars.
  • After 10 - 15 minutes, pour the water from the cans into a saucepan and bring to a boil. While the water is boiling, pour 1 tbsp into a jar of cucumbers. l. salt, 0.5 tbsp. l. sugar, 1 tsp. mustard seeds, 8 -10 pieces peppercorns, 1 tsp. vinegar essence. Don't forget that this is for a 2 liter jar. Fill with boiling water and roll up the lids. Turn the jar up and down several times to dissolve the salt and sugar. Turn the jars over and put them on the lids and, once they have cooled completely, you can hide them until winter.
