Lobio is a traditional dish from Georgia, translated as “beans”, the basis of which is boiled, with the addition of vegetables, meat, and mushrooms. It can be prepared not from this type of legume, but since there are about a hundred of them, there are many recipes for lobio.

Beans - offer a large number of useful elements (potassium, magnesium, etc.), they are an ideal meat substitute, as they consist of protein, and beans are truly tasty if cooked correctly. In terms of its nutritional properties, it is on the same level as some types of meat. It is perfectly absorbed by the body, due to its high protein content, and is desirable for consumption by older people.

Beans have a positive effect on the central nervous system. Studies have shown that her lovers are people with a balanced character, kind and calm. According to the advice of nutritionists, beans should be present in a person’s diet at least twice a week.

Every Georgian woman has a single recipe for making lobio in her culinary arsenal. This is an independent dish, which is not usual for us, because beans are mainly used as an addition and addition to the main recipe. It can be used as a side dish and snack.

Preparing ingredients for lobio in Georgian style

For tasty and authentic lobio, you need to properly prepare the beans. You only need to take one variety, because different types are more or less hard, which affects the cooking time. For lobio, it is necessary to boil the beans, and in some cases they are ground to a mushy state. To speed up cooking and remove substances that cause bloating, it is pre-soaked in water. This water is drained and boiled in another, clean one.

What is a Georgian dish without spices? They add piquancy, sharpness, and aroma to the lobio. Depending on the recipe and your own taste preferences, you can use: onion, cilantro, parsley, marjoram, black and red pepper, suneli hops, white mustard, mint, bay leaf, cinnamon, cumin, saffron, cloves and other spices.

Onions go in a 1:2 ratio to the beans used. Chopped nuts are one of the main components of Georgian cuisine. Walnuts are mainly used.

Also, Georgian lobio is prepared with the addition of tomatoes. They are peeled (blanched) and crushed. You can remove the peel by making a cross-shaped cut and scalding with boiling water, or by briefly putting it in the oven. Sometimes, to simplify cooking, they are replaced with tomato paste. During the cooking process, they still lose their shape.

Depending on the recipe, meat is added, usually lamb or beef, mushrooms are used, most recipes with champignons, but you can also take other + vegetables (bell peppers, carrots). The meat and champignons are cleaned of all unnecessary things, chopped, and fried in oil.

Many lobio recipes use garlic. It is added at the very end to add aroma and improve taste.

How to cook red bean lobio classic recipe

To begin with, you need to pre-soak 300 grams of red beans in cold water for at least 6 hours (it is best to soak overnight to save time).

Separate the leaves from the stem of fresh cilantro, the fresher it is, the richer your dish will be. Finely chop the stems and marinate for several hours, or overnight, in vinegar.

After the time has passed, the beans need to be washed and filled with cold water, just enough to cover the beans a little. Bring the beans to a boil and continue to simmer for half an hour to an hour over medium heat. It is necessary to regulate the amount of water during cooking so that the beans do not burn or float in it. By the end of cooking, the water should evaporate, but if there is a lot of it, drain it, add a little.

Onion, 3 medium heads, peeled and chopped. Wash and blanch the tomatoes, making a cross-shaped cut and place them on the fruit in boiling water, then remove the skin. Chop the peeled tomatoes into cubes.

Pour a little oil into the pan and fry the onion until golden. Add chopped tomatoes to it and fry them over high heat, stirring, for about 10 minutes.

Now you need to transfer the tomatoes and onions into a saucepan, adding to them 120 grams of chopped walnuts, pickled cilantro and chopped leaves. From spices, you can take oregano, mint, suneli hops and pepper, black and red, salt, adjust their quantity to taste. Press 3 cloves of garlic through a press, or chop very finely.

Reduce the heat to low and keep the mixture like this for about 10 minutes. Add boiled beans, stir and cook for the same amount.

By the way, the Azerbaijani lobio recipe differs from the classic recipe only by the absence of tomato. The remaining ingredients and sequence of actions are the same. For lobio in Azerbaijani style, you need to use only red beans. Seasonings and spices, you can take any.

How to cook lobio in Georgian recipe with red beans and meat

Before you start cooking, you need to soak half a kilogram of red beans for several hours in water. Place the beans in cold water to cook.

Also, you need to take care of the meat in advance. This recipe uses half a kilogram of lamb pulp; it must be washed, cut and pressed into pieces in sunflower oil for about half an hour.

To prepare this dish, you need a deep, large frying pan or fry all the ingredients and mix in a saucepan.

Without removing the pan from the heat, chop 600 grams of blanched tomatoes, peeled, and add them to the meat. Peel, chop and add 3 onions to the tomatoes and lamb. Add some hot pepper, 5 cloves of garlic pressed through a garlic press, chopped dill and cilantro, and salt. Simmer everything over low heat.

Cooked beans must be pureed until mushy and added to all other ingredients. Simmer everything for no more than ten minutes.

How to cook lobio with green beans

  • Half a kilogram of green beans is enough;
  • the same amount of tomatoes;
  • 100 grams of walnut kernels;
  • 2 onions;
  • 3 cloves of garlic;
  • a bunch of cilantro and other greens.

You need to remove the skin from the tomato, then chop it finely and simmer with salt and pepper. This must be done before the moisture evaporates from the fruit. Then rub them through a sieve or in any other way convenient for you to form a paste, using a mixer, blender or meat grinder.

Peel the onion and garlic, chop and fry them until the onion is golden.

Add tomatoes, roasted beans, spices + chopped herbs to the boiled beans. Mix everything well and simmer for no more than fifteen minutes.

White bean lobio with meat in a slow cooker

  • 0.5 kg white beans;
  • 2 onions;
  • sunflower oil;
  • 50-70 grams of tomato paste;
  • half a kilogram of meat (chicken or pork);
  • 50 grams of walnuts;
  • hot peppers;
  • 3 cloves of garlic;
  • fresh herbs;
  • spices.

Place the pre-soaked beans in a slow cooker for an hour, then grind them until mushy. Cook the chopped meat in the “frying” mode for about half an hour, stirring occasionally.

Now let's make the sauce. Fry chopped onion in oil. Chop the nuts + crushed garlic, take 2 cloves. Add hot pepper and a little bean broth, tomato paste, spices and chopped fresh herbs (cilantro, dill) and other spices, and salt.

In a slow cooker, layer: fried meat, boiled white beans, and sauce on top. If there is not enough liquid, water can be added. Simmer the lobio for an hour.

Lobio recipe with egg

This is a fairly simple, low-calorie and healthy recipe for Georgian cuisine.

Rinse well, remove the ends from the lobio, you need 800 grams of green beans, cut them into approximately 3 cm. Put it on low heat. Chop one onion and add to the beans after boiling. It can be fried if desired.

Now you need to beat 2 chicken eggs, add a little water, chopped herbs (cilantro, basil, parsley), a clove of garlic, spices and salt.

How to cook lobio with champignons

Cook 200 grams of pre-soaked red beans for an hour and a half. Wash and coarsely chop 250 grams of champignons, then fry until golden brown. Press 4 cloves of garlic through a press and add to the fried mushrooms. Chop 50 grams of walnuts and add to all other products. Add spices and salt to the lobio, mix everything. Decorate with greens.

This walnut lobio recipe is a little more complicated. In order to prepare this lobio, you will need:

  • red beans;
  • onions, carrots, peppers;
  • walnuts;
  • garlic;
  • parsley (or cilantro), basil, bay leaf, red pepper, salt.

Boil the beans as described above, but during cooking add bay leaves to the beans. In a separate bowl, crush the garlic. Fry the onion in a frying pan, add carrots to it, fry, add fresh red pepper (sweet), simmer everything together until half cooked. Then add ketchup or tomato paste and simmer the spices for another 5 minutes. Add nuts to the vegetables, stir. Add slightly mashed beans. Finally, add the herbs and garlic to the dish and simmer until done for a few more minutes.

Beans with nuts and mint

Another recipe in which beans are successfully combined with nuts. Cook the beans. In a separate bowl, mix chopped or crushed garlic with nuts (chopped), salt and red pepper. Pour wine vinegar into a saucepan, mix with basil and cook for a couple of minutes. Pour this mixture into the garlic-nut mixture. Add cinnamon, savory, mint and suneli hops.

Mix the beans with the fried onions and let them soak in the hot oil for a few minutes. Finally, mix the beans with the nut mixture and sprinkle with herbs.
