1. How to cook an egg correctly

For a perfectly hard-boiled egg, the yolk should be soft and bright yellow, not pale or even bluish (a bluish and greenish tint to the yolk indicates that the egg is overcooked).

To boil several eggs properly, you need a saucepan large enough to place all the eggs in without touching each other, but not large enough for the eggs to move around in it. So, pour water into the pot - just enough to cover the eggs when you put them in. Bring the water to a boil and gently dip the eggs into the boiling water. It is advisable to do this with a tablespoon so as not to burn yourself and not to drop the egg, damaging the shell. The eggs should boil for 8 minutes. 2. How to cook scrambled eggs

Scrambled eggs are best cooked according to the French recipe, when the finished scrambled eggs have a semi-liquid consistency of sauce (English scrambled eggs are dry, harder). Previously, to prepare this type of fried eggs, chefs used a double boiler so that the cooked dish had a thick consistency. We suggest using the faster method at the rate of 2-4 eggs per person.

Put 30-40 grams of butter in a medium saucepan and put it on low heat. While the butter is melting, break the eggs into a ceramic bowl. 3. How to make an omelet

To make a good omelette, you only need to know one rule - the omelet should not burn. You will need a small skillet to make an omelet. Turn on medium heat and dissolve some butter in a preheated skillet. While the butter is melting, break the eggs into a ceramic bowl, add salt and pepper to taste, and shake until the yolks and whites are combined until smooth. When the butter has melted, pour the eggs into the skillet. Stir the omelet with a wooden spoon to prevent hardening and crusting. When the eggs are almost done, remove the pan from the heat and place on the grill for a few minutes to form a yellowish (but not brown!) Crust on top. Remove the pan from the grill, fold the omelet in half and place on a plate. If you wish, you can add cheese or cream to the omelet before sending the pan to the grill.

4. How to cook pasta

There is nothing difficult in making pasta. To do this, you need a large saucepan - for example, the saucepan in which you usually cook stock is ideal. Fill a saucepan halfway with cold water and salt well - this is necessary to emphasize the taste of the pasta. Do not add oil or other ingredients to the water. Place a saucepan on a fire and bring the water to a boil. When the water is boiling, put the paste in it. Stir the water from time to time to prevent the paste from sticking to the bottom of the pot and sticking together. Different types of pasta take different times to prepare (but generally around 8 minutes), so we recommend that you read the instructions on the pasta packaging. You need to check the readiness of the pasta two minutes before the time indicated on the package. To check if the pasta is ready, take out one spaghetti (or other variety) and try it. If the pasta is soft on the outside but hard on the inside, it is ready (this stage of preparation is called "al dente"). Drain some of the water in which the pasta was cooked into a separate container, after which the water can be drained, but not completely, otherwise the pasta will be too dry. You do not need to rinse the paste with running water. In Italy, pasta is often served with butter and parmesan. If you prefer a sauce, use the water that you drained from the pasta to prepare it.

5. How to make the perfect steak

This is a French steak recipe and the French love uncooked steaks. So, you will need a heavy, heavy-bottomed skillet or grill rack. Place the skillet or wire rack over the highest heat. Take a thick steak (at least 2 cm thick) and lightly salt and pepper on both sides. If you are using a grill grate, brush the meat with sunflower oil, then the technology is the same. Pour one to two tablespoons of sunflower oil into a hot skillet (just enough to grease the surface of the skillet). Now add 20-30 grams of butter. The oil should melt and boil. The bottom of the pan should be covered with a 1 to 2 mm layer of boiling butter. Place the steak in the skillet and leave it alone for a few minutes (depending on how deep you like the steak). The steak should not move around in the pan, otherwise it will not form an appetizing crust:

Almost damp: 1 minute each side
Half-baked: 2-3 minutes per side
Medium: 4 minutes per side
Well done: 5-6 minutes on each side

You can add more butter (if needed) before turning the steak to the other side. Turn the steak over and don't touch it until it's time. Remove the steak from the pan, place on a plate, cover with foil and leave for 3-5 minutes. After this time, the steak can be served.

6. How to cook rice

For most people far from cooking, cooking rice is terrifying. Rice is actually very simple to make. So what's the secret to puffed loose rice? You will need white long grain rice, such as basmati varieties. The recipe is for 3-4 people.

Pour some vegetable oil (2-3 tablespoons) into a medium saucepan and place the saucepan over medium heat. When the oil has warmed up, place the finely chopped half of the onion in a saucepan (onions are optional, but oil is a must!). Fry the onions until light golden brown. Add a full glass of rice to the fried onions and mix thoroughly. Pour the rice with onions with two glasses of hot water (unboiled). When cooking rice, use a 1: 2 ratio (for one glass of rice, two glasses of water). Season generously. For a change, you can add half a cinnamon stick to the rice. Wait for the rice to boil again and cover the pot with a lid. Reduce heat to low and set timer for 15 minutes. Do not remove or lift the cover during this time. After 15 minutes, remove the lid and check to see if there is liquid in the pot. To do this, tilt the pan towards you while holding the rice with a fork. If liquid remains, cover the pan with a lid and let sit for a few more minutes, this time checking the rice every minute as described above. When there is no liquid left in the rice, remove the lid and cover the pan with a towel for 4-5 minutes. That's all!

7. How to make mashed potatoes

This is a proven and reliable method of making mashed potatoes without lumps and is used by chefs in French restaurants. So, peel and cut 6 medium potatoes in half. Place the peeled potatoes in a saucepan (the pan should be 2/3 full). Cover the potatoes with water and salt generously (the water must be salty). Bring the water to a boil and cover the pot, but not completely, or the water will escape. Cooking takes 10-25 minutes, depending on the type of potato. When the potatoes are ready, that is, soft, but not falling apart, they must be removed from the pan, after carefully draining the water. Pour 3/4 cup cream or sour cream into another saucepan or refractory dish and bring to a boil. As soon as the cream comes to a boil, turn off the heat immediately. Rub the boiled potatoes through a sieve (the same one you use to sift the flour), helping yourself with a tablespoon. The activity is quite difficult, but your efforts will pay off. Put the mashed potatoes through a sieve in a saucepan and put on low heat. Add butter (30-50 grams) and gently mix with potatoes (with a wooden spoon!) Until smooth. While stirring the potatoes, slowly pour in the hot cream to speed up the softening of the oil and make the taste of the potatoes softer. Pay close attention to the amount of cream - the potatoes should not turn into a slurry, its consistency should be thick. Add grated nutmeg to the mashed potatoes. Season with salt and pepper to taste. Serve the mashed potatoes hot.

8. How to cook fried potatoes

First of all, it is better to fry potatoes in goose or duck fat. If this is not possible, replace the fat with lard or cracklings. Cut the peeled potatoes into medium-sized pieces (small potatoes - in half, large potatoes - in four parts). Melt the fat in a preheated skillet at the rate of 50 grams of fat per 500 grams of potatoes. Place the sliced ​​potatoes in a skillet and stir until all of the potatoes are greased.
